DESCRIPTION:Our local producer of duck eggs\, Four Acre Farm is in need of community support to help keep their farm and business. The Co-op is holding a fundraiser throughout March to benefit this woman-owned farm in Lewiston\, MN. \nSarah has been raising and selling duck eggs since 2016. Her flock of ducks lay eggs seasonally from mid-February through November. Sarah is passionate about animal health and welfare. Her ducks enjoy lots of time outdoors on pasture and are provided with non-GMO feed. The flock is made up of Silver Appleyard ducks\, which is a heritage breed that produces the eggs from Four Acre Farm. This dual-purpose breed is naturally suited to small-scale farming\, which helps create greater resilience in our food supply\, while also preserving the history of this beautiful poultry breed. \nBenefits of Duck Eggs \nMany customers who are sensitive to chicken eggs find that duck eggs are a great alternative that they can enjoy. Duck eggs are higher in protein (nearly double) than chicken eggs\, even when the size difference is taken into consideration. Duck eggs are also richer in antioxidants\, omega-3\, iron\, zinc\, and selenium\, plus they can have 50% more vitamin A than their chicken counterparts. \nDuck eggs are highly prized in the kitchen by chefs and bakers for many reasons. Oftentimes baked goods will rise better\, hold their shape better\, and be more moist and fluffy when made with duck eggs instead of chicken eggs.
